Sicilian cod fritters (baccalá fritters) are a rich and hearty dish that comes from Sicily. The typically Sicilian addition of raisins and spices give these fritters an agro dolce, almost dessert like taste. The texture and sweetness will also surely appeal to children.

Fry pan Tongs Paper towels |
Ingredients
Baccalá, salt cod, that has been soaked for three days
Parsley, finely chopped Raisins Small onion Garlic Pignoli nuts Two eggs Bread crumbs for the breading One egg whisked with a little milk flour bread crumbs oil for frying |
Boil the soaked cod
Even though the cod has soaked for three days,it needs to be boiled for about twenty minutes.

Break the pieces
When the cod has cooled, break it into pieces.

Process
Blend the cod with the eggs in the processor.
The cod will turn to what looks like mashed potatoes |
Onions and garlic
Add the onions and garlic and blend until smooth,

Raisins, pignoli, bread crumbs
Remove from the processor and fold in the raisins, the pignoli and the bread crumbs

Parsley
Fold in the chopped parsley

Form the fritters
Form the fritters to cradle in the palm of your hands.
Dredge in flour. Turn in the whisked egg. Dredge in the bread crumbs. Careful - they are very delicate. |
Fry
Fry at around 375.
Test the oil by tossing in a few bread crumbs. If they bubble the oil is ready. The first set of fritters may be darker than the rest. Drain on paper towels |
